小拇指说好之二 ~ 黑白芝麻面包 @ Black and White Sesame Bread

以下这个是我的旧作之一 ~ 面包体是用了 Kopitiam Milk Bun

黑白芝麻面包

在检查照片时,才发现忘记把“它们”贴上。这个咖啡店面包经常出现在我家,用的牛油份量不多,可是没有了牛油,面包就少了牛油香。

材料A(中种)
215g          高筋面粉 (215g high protein flour)
2g               酵母 (2g instant yeast)
125g          全脂牛奶 (125g full cream milk)

材料B(主面团)
90              高筋面粉 (90g high protein flour)
15g            奶粉 (15g milk powder)
3g              酵母 (3g instant yeast)
30g            鸡蛋 半个 (30g egg - half of an egg) 
40g            细砂糖 (40g caster sugar)
1/4茶匙     盐 (1/4 tsp salt)
45g           牛油 (45g butter)

装饰材料
少许            蛋液 - 半个 (1/2 beaten egg) 
少许            白芝麻 (Some white sesame)
少许            黑芝麻 (Some black sesame)

步骤
1. 材料A:把所有材料用手搓均匀,室温发酵4小时。
     Ingredients: Mix all ingredients until even, ferment at room temperature for 4 hours.

2. 把所有材料B(除了牛油)放入面包机,把发酵好的材料A撕成小块一起加入。
    Put all ingredients B (except butter) into the bread maker, tear fermented (1) and add 
    it into the bread maker as well.

3. Kenwood BM 250 面包机: ( 用8号面团功能,1小时半),把面团打均匀,在面包机第
    一次拌停止后 (搅拌5分钟后会休息5分钟),加入牛油,让面包机继续搅拌过后
    让面团在面包机里发酵1小时
    Kenwood BM 250 Bread Maker: (use function no. 8, 1.5 hours), mix all ingredients in (2).
    When the bread maker rest after the first mixing (after the bread maker mix for 5 minutes,
    it will rest for 5 minutes) , add in butter. Let the bread maker do the rest of the work and sit
    back to relax.

4. 取出面团,把面分为每个60g,搓圆再拉长少许,形成少许椭圆形,放在铺了烘培纸
    的烤盘里,盖上湿布,等面至少双倍发大后,扫上少许蛋液,表面洒一些白芝麻
    黑芝麻放入预热烤箱170度烤16分钟,即可。
    Once it is done (after 1.5 hours), remove the dough from the bread maker, divide the 
    dough into 60g each, roll the dough to form a slightly oval shape, put in the baking tray, 
    line with baking paper, cover with damp cloth, let the dough raise to at least double 
    size, brush with beaten eggs, sprinkle the surface with some white sesame and , 
    bake in preheated oven at 170 degree Celsius for 16 minutes.

  6. Yumm... wish I can make some bread soon but hubby wants me to take some rest. I am really exhausted. Life has been pretty hectic eversince after my FIL past away 3 weeks ago.
