卤猪肉 @ Braised Pork

上个星期六是小老板的农历生日记得小时候,婆婆时常说“吃蛋,脱个难”,生日一定要吃蛋所以每逢家人农历生日时,我都为他们准备两个水煮蛋。

卤猪肉

小老板不爱水煮蛋可能水煮蛋淡淡无味他喜欢吃茶叶蛋,但是我没足够的时间准备,所以在煮晚餐时,煮了卤猪肉,加入了水煮蛋,那么就可以" 骗 "他吃了。我是不是很蛊惑?

之前看见 Tracy卤猪脚,就觉得很美味。以下食谱是参考 Tracy卤猪脚,做了一些更改,来迎合我家的口味。

材料 (Ingredients)
350g          五花肉-切块 (350g pork belly - cut into pieces)
6朵             鲜菇 (6 nos fresh mushroom)
5个             水煮蛋 (5 nos hard boiled eggs)

卤汁 (Gravy)

1公升         水 (1 litre water)
2个             蒜头 - 把外层剥掉 (2 nos garlic - peel off the outer layer)
5个             八角(5 nos star anise)
2汤匙         黑酱油 (2 tbsp dark soya sauce)
1汤匙         酱油 (1 tbsp soya sauce)
1汤匙         蚝油 ( 1tbsp oyster sauce)
1茶匙         盐 ( 1 tsp salt)
1茶匙         蘑菇精 (1 tsp mushroom essence)
10小粒       冰糖 (10 pellets rock sugar)

步骤 (Steps)

把卤汁材料大火煮滚后,加入五花肉,煮滚,再加入香菇和水煮蛋,煮滚后,转小火煮至五花肉的肥肉变软(入口即溶),汁稍为收干一些,即可。
Bring gravy to boil, add in pork belly, bring to boil, then add in mushroom and hard boil egg, bring to boil, turn to low flame, cook until pork belly soften (the fat of pork belly should be the kind of melt in the mouth), the gravy slightly dried up a little bit, and it is ready to serve.

补充:
写部落是我忙里偷闲,疏解压力的方法之一。刚开始写部落的时候,真的就是纯粹想记录我的烹饪,没想到会有人看,我,太感动了,从大家的身上也学会了很多。这个部落上的照片,是我用手机拍摄的,并且没有经过修饰,可能看在大家的眼里会让人觉得怎么就不能够做好一点。

  6. 各家卤各家喜欢的味道。。。而且还要隔夜的最美味,最入味。。。。
    有时候得空的话,我会特地晚上先煮,隔天煮烧即可品尝。。。呵呵!

    I love this dish! And could eat two bowls of rice with just this one dish, and I like to eat it with sliced chili padi and see yau! Yummy!

  11. Jozelyn, this dish is my big kids' favourite dish too ... they like dark or light soy sauce like braised chicken, pork. Yummy !
