巧克力香蕉蛋糕 @ Chocolate Banana Cake

之前去上制作生日蛋糕的课程,Chee Seng 老师教巧克力香蕉蛋糕,妈妈说好吃,所以2014这个母亲节,我第一次为妈妈做了自己亲手装饰的巧克力香蕉蛋糕。

巧克力香蕉蛋糕

这次我没有用 Chee Seng 老师教的海绵蛋糕,因为老师的蛋糕6寸,我想做个8寸的,于是选来了 Alex Goh 老师的海绵蛋糕,可是我糊涂了,食谱里的鸡蛋是一个净重60g,我用的鸡蛋是一个净重50g,而且可能鸡蛋打得不是很好,所以蛋糕好像很矮。不过我试了蛋糕,还是OK的。

巧克力海绵蛋糕食谱参考Alex Goh老师《行行出状元做蛋糕也赚钱》,巧克力甘那许参考 Chee Seng 老师。

巧克力海绵蛋糕
材料A
4个             蛋白 (4 egg whites)
100g          细砂糖 (100g caster sugar)

材料B

4个             蛋黄 (4 egg yolk)

材料C

80g            普通面粉-过筛 (80g plain flour - shifted)
20g            可可粉-过筛 (20g coco powder - shifted)

材料D

30g            玉米油 (30g corn oil)

装饰E 

200g           鲜奶油 (200g topping cream)
1.5tsp         巧克力浓浆 (1.5 tsp chocolate emulco)
3条              香蕉-切片 (3 nos banana - slice)

装饰F

120g            动物鲜奶油 (120g whipping cream)
150g            黑巧克力纽扣 (150g dark chocolate button)

装饰G
50g              鲜奶油 (50g topping cream)

装饰H

适量             黑巧克力纽扣 (Some dark chocolate button)

步骤

1.  用高速把材料A的蛋白打至发泡,加入糖改用中速打至坚硬。
      Whip egg whites with high speed until foamy, add in sugar and continue to whip in 
      medium speed until stiff.

2.  加入B打至浓稠。

      Add in B and whip until thick.

3.  加入C,用刮刀拌匀。

     Add in C, mix with a spatula until combined.

4.  加入D混合均匀。

      Stir in D and mix well.

5.  送入预热烤箱180度烤30分钟至熟,出炉后,马上脱模,待冷后,横切成2片。

     Bake in preheated oven at 180 degree Celsius for 30 minutes or until cooked, remove
     from mould immediately, leave to cool and cut into 2 slice horizontally.


6.  把材料E的鲜奶油和巧克力浓浆打发。

      Whip topping cream and chocolate emulco until stif.

7.  铺一片蛋糕在蛋糕托上,涂上少许(6),铺上香蕉片,再涂上(6)。

     Place a slice of cake on the cake board, use a spatula to spread some (6) on the 
     surface of the cake, cover with banana slice, then spread some (6) to cover the banana.

8.  把另一片蛋糕铺上,把整个蛋糕涂上(6),剩余的放入挤花袋,备用。

     Place another slice of cake on top of (7), then coat the whole cake with (6), the left over 
    (6) to be place in a piping bag for decoration later.

9.  把材料F隔水融化。

     Melt ingredients F over a double boiler.

10.把(8)用抹刀提起,放在铁架上,淋上(9),待巧克力酱不再往下滴时,再用抹刀

     提起,重新放回蛋糕托上。
     Use a spatula, life the cake in (8) and place on wire rack, drizzled (9) on top of the cake
     until the whole cake is coated, wait until the chocolate ganache stop dripping, use a 
     spatula to lift the cake and put it back on the cake board.

11.把材料G打发,装入挤花袋,挤花袋放23号花嘴。

     Whip ingredients G until stiff, put in a piping bag with nozzle 23.


12.用(11)和材料H做装饰。
      Decorate the cake with (11) or ingredients H.



打蛋白+糖

湿性发泡

打至硬性发泡后加入蛋黄

变成浓稠了


拌入粉

加入油

搅拌好后,入模

这样少,就知道不会变得高高的

出炉后

脱模

矮矮的

打巧克力鲜奶油

巧克力鲜奶油

放一片蛋糕

涂上鲜奶油

铺上香蕉片

再铺上鲜奶油

盖上另一片蛋糕
   
涂好后

放在铁架上

 
融化动物鲜奶油和巧克力纽扣(巧克力甘那许)

淋上巧克力甘那许

随意装饰

看不出是什么吧,对吗?

  6. 我还不敢尝试巧克力加香蕉, 因为不能想像什么味道 , 应该很不错吧, 看到很多的甜品都把这两样东西搭配在一起 ~

    1. Thanks, Lena. She enjoy this and she was surprise when I gave her the cake. Thanks for your advice, and I realize that actually beside that, the amount of ingredient G is 50g instead of 200g....hihihi...I copy it from ingredients E and forget to change it. Thank you!
