上两个星期成功挑战凯蒂猫五仁月饼后,我拨电给舅父,告诉他我会做个减糖版的五仁月饼给他,他很高兴。昨天终于把月饼送到他家,看见舅父吃得很开心,自己也觉得很高兴。
五仁月饼
这里要记录一下这个减糖版本的五仁月饼,共10个,其中一个比较小粒的被我吃掉了。。。舅母还给了一些关于制作五仁月饼的意见,这个星期若有空再次挑战。
饼皮
材料A (Ingredients A):
90g 自制糖青 (90g Homemade golden syrup)
38g 花生油 (38g Peanut oil)
2g 碱水 (2g Alkaline water)
材料B (Ingredients B):
150g 香港面粉 (150g Hong Kong flour)
内陷 (Fillings)
材料C (Ingredients C)
30g 核桃-烘香切碎 (30 g walnut -toasted and chopped)
30g 杏仁-烘香切碎 (30 g almond - toasted and chopped)
20g 南瓜子 - 烘香 (20g pumpkin kernels, toasted)
20g 瓜子 - 烘香 (20g pumpkin kernels, toasted)
40g 芝麻- 烘香 (40g sesame - toasted)
40g 桔饼-切碎 (40g kat paeng/candied lemon - chopped)
35g 糖冬瓜-切碎 (35g dried winter melon - chopped)
15g 细砂糖 (15g caster sugar)
4 tbsp 花生油 (4tbsp peanut oil)
3/8tbsp 自制糖青 (3/8tbsp homemade golden syrup)
1/8tsp 盐 (1/8tsp salt)
3片 枫杆叶 (3 pcs Kaffir lime leaves, shredded)
材料D (Ingredients D)
4 tbsp 水(4 tbsp water)
3tbsp 玫瑰露酒 (3tbsp rose wine)
60g 自制糕粉 (60g Homemade koh fun)
蛋黄酱 (Egg wash)
材料E (Ingredients E)
1个 蛋黄 (1 egg yolk)
2茶匙 水 (2 tsp water)
步骤 (Steps):
1. 把材料A搅拌均匀,休息1-2小时。
Mix ingredients A, let it reast for 1-2 hours.
2. 把材料B加入(1),搓成面团,然后盖上保鲜纸,休面1-2小时。
Sieve in ingredients B, mix to form a dough, cover with cling wrap, let it rest for 1-2 hours.
3. 揉成每个 25g 的圆球。
Divide into (25g each), shape into ball.
4. 把材料C混合均匀,休息1小时。
Mix ingredients C, let it rest for 1 hour.
5. 加入材料D,揉成每个35 的圆球。
Add ingredients D, shape into 35g ball.
6. 把(3)放在保鲜膜之间,用擀面棍擀平,包入(5),搓圆,放入撒上少许糕粉的模里,
压出,放在烤盘里。
Put (3) in between cling wrap, use the rolling pin to flatten the dough, wrap in (5), shape
into a ball, then place into a mould dusted with koh fun.
7. 放入气炸锅,160度烤10分钟。
Put into the air fryer, bake at 160 degree for 10 minutes.
8. 材料E搅拌均匀,过筛,备用。
Mix ingredients E until well combine, strain and set aside.
9. 取出(7),放凉15分钟,涂上两层(8),放回气炸锅,以160度烤5分钟。
Remove (7) from air fryer, let it cool for 15 minutes, apply 2 layers of (8), return to the
air fryer and bake at 160 degree for 5 minutes.
10. 取出后,放在室温,月饼回油后,即可食用。
Remove from air fryer, leave it cool at room temperature for 1-2 days, once the mooncake
skin soften, it is ready to serve.
那个特别小个的被我吃掉了
这次火候控制得不是很好,所以颜色不均匀
不过,帮“它们”打扮一下放入盒子咯,看起来又不一样了
