腌咸鸭蛋

之前看见妈妈和Nasi Lemak Lover (http://nasilemaklover.blogspot.com/2011/12/homemade-salted-eggs.html) 腌咸鸭蛋,已经有冲动想自己腌咸鸭蛋了。两个星期前,我去了 Kuala Pilah,路上看见很多摊子卖鸭蛋,一时兴起,就来腌鸭蛋吧!今天收成了!我的鸭蛋好美味哦!

材料:
10粒        新鲜鸭蛋 (Fresh duck eggs)-壳最好带点青色
1000ml   水 (Water)
400g       粗盐 (Coarse salt)
2粒         八角 (Star anise spice)
1汤匙     绍兴酒 (Shaoxing rice wine)

步骤
1. 将鸭蛋稍微抹干净,备用。
2. 将粗盐加入水里,用小火把粗盐煮至溶解,放凉。
3. 把已经冷却的盐水倒进一个干净的玻璃瓶里,加入八角和绍兴酒,再放进鸭蛋,盖上盖
    子,放在阴凉处收藏14

 第12天,鸭蛋已经接近90%好了!

第14天的咸鸭蛋,美味!

又去买了鸭蛋,放进了原来的盐水里,14天后,又有咸鸭蛋吃咯!

    1. This one I bought it along the road to Kuala Pilah. But my mum bought most of the duck eggs from a market at Cheras. You may try to buy from Malay stalls, remember to select those with greenery shell instead of very white shell because those duck eggs in greener shell usually has very orange colour egg yolk.
