牛头牌360度全能气炸锅 ~迷你美乃滋猪肉松面包

肉松和肉丝面包在我家是很受欢迎的。所以,今天把这个迷你美乃滋猪肉松面包放上来做个记录。


美乃滋猪肉松面包

那天在家里收拾时,才发现到,竟然有一包从台湾带回来的猪肉松被“遗忘”了,幸好还未过期,但是未免再次“遗忘”它,我得赶紧把它“干掉”。

以下的食谱可以做大概 11 个 50g 的猪肉松面包,我只做了5个,其余的面团做了芝麻小面包。仍然是用了咖啡店面包的食谱,可以按(1),(2),(3),(4),(5),(6)和(7)。 


劳动节早早就起来“劳动”了,祝大家劳动节快乐!

中种 (Sponge dough)
180g          高筋面粉 (High protein flour)
2g               酵母 (Instant yeast)
100g          牛奶 (Milk)

主面团 (Main Dough)
135            高筋面粉 (High protein flour)
3g               酵母 (Instant Yeast)
1个             鸡蛋 (Egg)
40g            糖粉 (Icing sugar)
1/4茶匙      盐 (Salt)
12g            牛奶 (Milk)
50g            牛油 (Butter)

装饰
适量          美乃滋 (Mayonnaise)
适量          猪肉松 (Pork floss)

步骤
1. 中种:把所有材料搓均匀,盖上保鲜膜,在室温发酵至少2个小时。
     Sponge dough: Mix all ingredients together by hand to form a rough dough, cover with 
     cling wrap,  and let it ferment in room temperature for at least two hours.

2. 主面团: 所有主面团材(除了牛油)放入面包机发酵好的中种撕成小块一起
     加入。
     Main dough: Put all ingredients into the bread maker (except butter), tear the sponge 
     dough into small pieces and add in as well.

3. Kenwood BM 250 面包机: 用8号面团功能,1小时半),把面团打均匀在面包机
    第一次搅拌停止后 (搅拌5分钟后会休息5分钟),加入牛油,让面包机继续搅拌
   (第二次搅拌20分钟),过后让面团在面包机里发酵1小时
     Kenwood BM 250 Bread Maker: ( Set to function no 8, 1 hour 30 minutes), knead the 
     dough, (the bread maker will stop after 5 minutes of kneading), at this time, add in 
     butter, the bread maker will resume kneading for 20 minutes and let the dough to
     proof in the bread maker. 

4. 取出面团排气,把面包分为每个大约50g(大概11个小面团),做造型,盖上湿布
    ,等面团双倍发大后,放入预热烤箱170度烤12 - 15分钟。

    Remove the dough from the bread maker, punch down the dough to expel air, divide 
    the dough into 50g each ( about 11 bread), shape the dough, cover with wet cloth, let
    the dough proof until double size, then bake in preheated oven at 170 degree for 
    12-15 minutes.
    [Buffalo 360 degree air fryer: Use "bake" function, bake at 170 degree for 4 minutes, 
                                                       then 150 degree for 3 minutes.]

5. 取出待冷后,用刀在中间部分轻轻割一半(不要切断),挤入美乃滋,加入猪肉松,
    即可。
    Remove from oven, leave to cool, use a knife to make a cut at the middle part of the 
    bun, put some mayonnaise and sprinkle with pork floss.

    I didn't know that the air fryer can bake bread... These floss buns looks yummy and they look like footy balls without the floss in one of your pictures :p

  3. 劳动节快乐!我前天才吃了美奶滋肉松面包。。不过,是买市售的白面包来夹肉松啦。。呵呵。。对于做面包,那股热忱还不及做蛋糕呢。。嘻嘻。。早餐还没吃,看到你的面包卖相那么棒,就来这里拿一个咯~ ^_^

  5. Hi Jozelyn, wow your buffalo air flyer can bake bread as well, it looks like a multi functions machine! The bread looks yummy with the floss...which I missed so much, we can't get pork floss or any floss here.

  12. Hi Jozelyn, do u recommend the Buffalo airfryer? Thinking to have one. Is the netting tray also stainless steel? Have u tried fried fish? Is it good? Sorry for so many questions :-P

      2. I have fried nugget and fish fillet (all frozen food) before but not the raw fish.
