玻璃曲奇 @ Stained Glass Cookies

香港电视剧“爱我请留言”,让我映像最深刻的,就是朱古力姐姐茹初见(黄翠如)不睡觉,凌晨起身做了玻璃曲奇。

玻璃曲奇 Stained Glass Cookies

当时我还以为玻璃曲奇~应该只是在电视剧出现的”道具“。想不到,当电视剧播完后,竟然在面书看见了玻璃曲奇,不过那些玻璃是果酱做的,没有让我冲动起来。

只是我发现到,之前”食为奴“落幕后,在网络就看到了咸鱼包;播完了“爱我请留言”,就出现了”玻璃曲奇“。。。咸鱼包没有让我冲动,反而“玻璃曲奇”让我兴奋,很想在小老板生日时做一些让他带去学校分给朋友吃。

直到前几天,我在 Sue 的家里看到了真正的玻璃曲奇,还等什么,赶快行动吧!同时,我也Google了一下,原来哦,玻璃曲奇,有了“很久”的历史。。。是我~井底之蛙也!

食谱取自 Sue,做了少许更改 

材料A (Ingredients A)
100g         无盐牛油-我用有盐的 (100g unsalted butter - I use salted butter)
60g            糖粉 (60g icing sugar)
2g              盐-我没有放 (2g salt - I omitted)

材料B (Ingredients B)
1个            鸡蛋 (1 egg)

材料C (Ingredients C)
200g         低筋麵粉-我用面粉代替 (200g low protein flour, I replace with plain flour)
2g              发粉 (2g baking powder)

材料D (Ingredients D)
适量           FOX果汁糖-每个用刀切半,可以切1/4 (Fox candy, cut half with knife, can cut 1/4)

步骤
1. 把材料A打至松发。
     Beat ingredients A until light and fluffy.

2. 加入材料B,打至完全混入(1)。
     Add in ingredients B, beat until completely mix with (1).

3. 把材料C过筛,分几次加入(2),用低速把所有材料打均匀。
    Sieve ingredients C, add into (2) in a few batches, use low speed to mix all ingredients 
    until even.

4. 把(3)放入冰箱1小时,取出压平,用饼模印出中空曲奇。
    [ 备注:建议直接在铺了烘培布的烤盘上印,比较容易。]
    Put (3) in the fridge for 1 hour, remove and roll the dough until flatten, use cookie cutter 
    to cut into desire shape with the centre of the cookie remain hollow.
    [ Remarks: Recommended to roll the dough on top of a baking pan lined with baking cloth.]

5. 放入预热烤箱,160度烤10分钟,取出,在每个曲奇中央放入半个FOX果汁糖,再放入
    烤箱,烤8-10分钟至果汁糖溶化,形成玻璃。
    Bake in preheated oven at 160 degree Celsius for 10 minutes, remove from oven, place 
    the fox candy in the centre of each cookie, then return to the oven, bake another 8-10 
    minutes until the candy melted and form a glass.

6. 出炉后,待曲奇完全冷却,才可取出。
    Let the cookies completely cool before remove them from the baking cloth.


材料A

打至松发

加入鸡蛋

打至蛋完全和牛油糊混合

加入面粉

变成不黏手的面团

放入袋里杆平,才冷冻

印出星形

果汁糖切半(切1/4较好,发现我的玻璃比较厚)

每个曲奇放入半粒FOX果汁糖

好了

OK 吗?

竟然忘了拍黄玻璃。。。

还蛮好吃的饼干,我自己都很喜欢,只是玻璃厚了一点,要改善。。。

  3. 我也是发现玻璃糖的厚度会影响饼干的口感哦, 越薄的玻璃饼干会越好吃。。 :)

  4. 啊。。你做了。。很美呀!
    曾经想做,但家里没有小孩。。而我又不怎么好糖果。。所以,我还是在旁边看看过过瘾就好了。。呵呵。。
    很好奇,糖果那么硬,这款曲奇是要怎么吃啊?是不是吃了曲奇,剩下的糖果就像平常吃糖果那样放嘴里衔着啊?

    1. 糖果层我做得稍微厚了一点,但是也没有太过厚,就跟饼干一起咬着吃,很好吃一下的,可能是我自己本身也是很喜欢FOX糖的关系。
