鸡蛋冬粉汤

小时候和婆一起住,她时常煮这道鸡蛋冬粉汤。虽然她已经去世八年了,但是每当我煮一些比较家传的菜肴时,都会想起她。。。毕竟,小时候第一次下厨,就是教我的

鸡蛋冬粉汤

这是一道比较简单的料理。这几天假期天天都往外跑,大多数都在外用餐,星期天想吃些清淡的,自然就想到了这个鸡蛋冬粉汤。以前婆婆煮这道料理,就只是鸡蛋,冬粉和冬菜,虽然简单,但是确实很美味。如今,我在煮这道料理时,还加料了。。。

材料
2个            鸡蛋-打散 (Eggs - lightly beaten)
1000ml     水 (Water)
2汤匙        天津冬菜-洗净,沥干水分 (Tianjin preserved vegetable)
适量          冬粉-稍微浸软 (Glass noodle -slightly soak to soften)
适量          鱼丸 (Fish ball)
适量          青菜 (Vegetable, I use butterhead)
2茶匙        蘑菇精 (Mushroom essence)
1茶匙        盐 - 试味,如果够咸,不用加 (Salt) 
少许          胡椒粉 (Pepper)

步骤
把鸡蛋煎香(鸡蛋煎老一些比较好吃),倒入水,煮滚后加入冬菜,稍微煮几分钟,让冬菜出味,然后顺秩序加入其他材料,煮滚,即可食用。
[ 备注:可以撒一些香菜,配着酱油辣椒一起吃,味道更佳!]



材料

煎香鸡蛋

最好煎至两面金黄

用锅铲把鸡蛋切小块

加入水

加入冬菜

加入鱼丸

加入冬粉
  
最后加入青菜和调味料

煮好了

    I remember eating this when I was young. This fried egg noodles is so simply and yet so good.

    Btw, regarding your question about using yogurt to substitute sour cream... I think yogurt, being lower fat and having a higher amount of water might not work as well as sour cream. Try WHIPPED cream and I'm pretty sure that it will be as good as sour cream :D

    Hi Jozelyn, my version of the egg noodles is mee suah. We used to have egg mee suah soup and it's very yummy too.

  5. Jozelyn, 我今天晚上也来煮面吃,不过是板面。你的汤面看来很不错。我家人不爱东粉,每次都是吃面或面粉。
