当别的部落开始上小三卷,我依然陶醉在 kopitiam milk bun,那也是因为母亲大人和大老板有令,看来我这么多作品当中,只有这个是他们的最爱。
Kopitiam Milk Bun
之前头炮做了香兰味的 kopitiam milk bun,不过阴差阳错,变成了冰花糖 kopitiam milk bun,后来再做,又加了料,想了想,不如做个原味的加料,所以就有了以下的原味 kopitiam milk bun。
这次我做了4种加料的,一批加了葡萄干和表面撒了粗糖,一批里面加了白兰他面包油表面撒了粗糖,一批里面加了芝士片,最后一批什么都没放,原味的,不过在上面放了一颗核桃,来方便自己辨认面包:)
材料A (中种)
214g 高筋面粉 (High protein flour)
2g 酵母 (Instant yeast)
128g 全脂牛奶 (Full cream milk)
材料B(主面团)
92g 高筋面粉 (High protein flour)
12g 奶粉 (Milk powder)
3g 酵母 (Instant Yeast)
1个 鸡蛋 (Egg)
35g 糖粉 (Icing sugar)
2g 盐 (Salt)
12g 全脂牛奶 (Full cream milk)
45g 牛油 (Butter)
装饰
40g 葡萄干-用热水浸软,挤干水份
1片 芝士
适量 粗糖
适量 白兰他
适量 核桃
步骤
1. 中种:把所有材料搓均匀,放入冰箱至少12小时。
2. 把发酵好的中种撕成小块放入面包机(用8号面团功能,1小时半),加入所有主面团材
料,把面团打均匀,取出,做造型,等面团双倍发大后,放入预热烤箱170度烤12 - 15分
钟。
在冰箱度过了12小时候的中种
把所有主面团材料(除了牛油)放入面包机
加入撕成小片的中种,就可以开始打均匀
搅拌2分钟后加入牛油
搅拌住
搅拌好后
全程1小时30分钟
把面团分为每个越35g,就可以做造型,并排入抹了油的烤盘
盖上湿布,进行第二次发酵
发酵了15分钟,我就送进了烤箱,因为已经很夜了,周公约会了我
有美吗?出炉后,我刷了少许牛油在表面
