今年的母亲节,做了芒果优格蛋糕为母亲庆祝。同时,祝贺所有的妈妈们,母亲节快乐,身体健康,笑口常开。
芒果优格蛋糕
同时,这个月由 Cheryl 主持小拇指,主题是优格,所以,我趁机献上这个优格蛋糕。
每次做戚风蛋糕,总是忘记把下面食谱减少一些分量,搞到蛋糕长了冬菇头。以下5个蛋的食谱,比较适合8寸圆模。

材料A (Ingredients A)
5个 蛋黄 (5 egg yolks)
25g 细砂糖 (25g caster sugar)
少许 盐 (Pinch of salt)
115g 牛奶 (115g milk)
80g 玉米油 (80g corn oil)
120g 特幼面粉 (120g superfine flour)
材料B (Ingredients B)
5个 蛋白 (5 egg whites)
1/4茶匙 塔塔粉 (1/4 tsp cream of tartar)
35g 细砂糖 (35g caster sugar)
装饰材料C (Decorating ingredients C)
100g 打发植物性奶油 (300g beaten topping cream)5个 蛋黄 (5 egg yolks)
25g 细砂糖 (25g caster sugar)
少许 盐 (Pinch of salt)
115g 牛奶 (115g milk)
80g 玉米油 (80g corn oil)
120g 特幼面粉 (120g superfine flour)
材料B (Ingredients B)
5个 蛋白 (5 egg whites)
1/4茶匙 塔塔粉 (1/4 tsp cream of tartar)
35g 细砂糖 (35g caster sugar)
装饰材料C (Decorating ingredients C)
1罐 135g 芒果味优格 (1 can 135g mango flavoured yogurt)
100g 打发植物性奶油 (300g beaten topping cream)
适量 芒果 (Some mangoes)
适量 草莓 (Some strawberries)
适量 奇异果 (Some kiwi)
适量 罐头龙眼 (Some canned longan)
少许 胶状果冻 (Some piping jelly)
装饰材料E (Decorating ingredients E)
100g 打发植物性奶油 (300g beaten topping cream)数滴 巧克力Emulco (Few drops chocolate emulco)
步骤 (Steps)
1. 把材料A搅拌均匀,备用。
Mix ingredients A until well, set a side.
2. 把材料B打至硬性发泡。
Cream ingredients B until stiff peak form.
3. 把(2)分次拌入 (1),再倒入7寸圆型脱底模,然后轻轻敲出空气,放入预热烤箱170度烤40
分钟至熟透。
Mix (2) into (1) in few batches, pour into a 7 inches round loose pan, gently knock out
excessive air, bake in preheated oven at 170 degree Celsius for 40 minutes until cooked.
4. 取出后,从离桌面大概20cm高度的地方,把蛋糕摔在桌上,把蛋糕倒扣,待冷才脱模。
Remove from oven, lift the cake about 20 cm high from the table and give it a free fall
onto the table, overturn the cake and let it cool completely before remove from mould.
5. 蛋糕横切成3片。
Cut the cake horizontally into 3 equal portion.
6. 打发300g鲜奶油,分成3分,一份加入芒果优格,搅拌均匀 (装饰材料C);一份加入巧

克力 emulco(装饰材料E),分别放入2个挤花袋,其中一个挤花袋放入34号花嘴,另一
个只需剪一个小洞;最后一份无需加入任何东西(装饰材料C)。
Whip 300g topping cream, divide into 3 portions, one portion to be mix with mango
flavoured yogurt (decorations ingredient C), another portion to be add with chocolate
emulco (decoration ingredients E) and place into 2 piping bag, one of the piping bag
should use piping nozzle no. 34 and the other one just cut a small hole at the piping bag,
the last portion of topping cream (decorating ingredients D) just remain as it is.
7. 把1片蛋糕放在蛋糕板上,涂上1/4装饰材料C,表面撒少许芒果丁,再盖上1/4装饰材料
C,接着再铺1片蛋糕,涂上1/4装饰材料C,表面撒少许芒果丁,再盖上1/4装饰材料C,
最后再铺上1片蛋糕。
Put 1 piece of cake on the cake board, spread 1/4 of decorating ingredients C onto the
cake, top with some mango cubes, then cover the mango cubes with 1/4 of decorating
ingredients C, place 1 piece of cake on top, again , spread 1/4 of decorating ingredients
C onto the cake, top with some mango cubes, then cover the mango cubes with 1/4 of
decorating ingredients C and finally cover with the last piece of cake.
8. 把整个蛋糕涂上材料E里的鲜奶油,然后随意铺上水果和在水果表面涂上胶状果冻。
Cover the whole cake with whip cream in ingredients E and decorate with fruits as
desired and coat the fruits with a thin layer of piping jelly.
9. 最后,用材料E在蛋糕四周挤成花篮。可以参考这个 Video。
Finally, use ingredients E to decorate into a basketweave. You can refer to the video
