巧克力马卡龙 Chocolate macarons

这个月,约了 Aunty Young 一起挑战马卡龙,同时也要谢谢美娘子 Joceline 和我分享了很多的心得。

巧克力马卡龙

在还没做马卡龙之前,看了很多人的食谱,也在 Youtube 看了很多视频,原本打算上个月就要做马卡龙,可是一直拖到这个月,甚至,以为在很短时间内,就可以做好马卡龙,可是哦,那个过筛杏仁粉的过程,就弄了1个多小时了。

以下是我第一次做的马卡龙,虽然很丑,可是它却很好吃,我母亲大人也试了一个,她以为是夹心饼干 ^_^。

以下食谱取自 Joceline我做了21个马卡龙,谢谢她的好分享。

我眼粘stamp,把25g细砂糖,看成了20g,少放了5g @_@ 不知道是否这也是导致裙边没有出来的关系?

材料A (Ingredients A)
45g        杏仁粉 (45g ground almond)
45g        糖粉 (45g icing sugar)
5g          无糖可可粉 (5g unsweetened cocoa powder)

材料B (Ingredients B)
35g        蛋白 (35g egg whites)
25g        细砂糖 - 我放20g (25g caster sugar - I put 20g)
少许       塔塔粉 (Some cream of tartar)

夹心层 (Fillings)
适量      芝士片 (Some cheddar cheese slice)


步骤 (Steps)
1. 把杏仁粉放入混合器里,打碎后过筛数次,加入其他材料后,再打碎,重新过筛,备用。
    Place ground almond into a blender, blend until fine, sieve few times, add in other 
    ingredients A, blend again and sieve for the last time.

2. 把材料B打至干性发泡(我打至8-9分发),加入(1)里搅拌均匀,放入挤花袋,挤在一
    张垫着画了圈圈的烘培纸上,挤出的蛋糊不要超出圈圈。
    Whip ingredients B until stiff peak form (I whip until 80-90% towards stiff peak), add into
    (1), mix well, place in a piping bag, pipe onto a piece of baking paper on top of another 
    sheet of baking paper with drawn circle.

3. 拿起烤盘,轻轻的往桌上敲,以便蛋糊表面均匀。
    Life the baking pan, lightly tap on the table to flatten the batter.

4. 预热烤箱200度后,关火,把烤盘放在中下层焖5-6分钟,此时,烤箱门夹住手套,过后
    把烤箱调至120度烤5分钟(此时应该会出现裙边,我的只有少部分的马卡龙出现迷你
    裙),再调制100-120度烤 8-10分钟直到马卡龙熟透为止(我用110度10分钟)。
    Preheat oven to 200 degree Celcius, turn off the heat, place the baking pan at the middle
    lower rack, let the baking pan stay in the oven for 5-6 minutes by placing a glove at the 
    door of the oven to allow some fresh air into the oven, turn on the oven, set the 
    temperature to 120 degree Celsius, bake the macaron for 5 minutes (by this time, you
    should be able to see some skirting, only some of my macaron has mini skirting), turn the
    temperature to 100-120 degree Celsius and continue to bake for 8-10 minutes until 
    cooked (I bake at 110 degree Celsius for 10 minutes)

5. 马卡龙冷却后,夹上车打芝士片,即可。
    Sandwich macarons with cheddar cheese slice.
