美乃滋鸡丝面包

近来一直都在做 kopitiam milk bun,只是每天做不同口味的,原味的,香兰的,全麦的,巧克力的,加料的。。。说真的,巧克力的,做了两次出来的成果就觉得不是那么理想,我也不知道为什么。。。只能说,“巧克力不喜欢我。。。”

鸡丝面包


今天还是用了同样的配方,做了这个鸡丝面包,带了一些去舅舅家,他们吃了都说好好吃。大老板睡前要吃宵夜,拿起了一个鸡丝面包,咬了一口后,问我,“为什么这样软的?硬一点就好。。。太软了!”

真难服侍,记得以前做面包,他说面包太硬,最好做软些,现在做的面包够软了,他说要硬一些比较好。。。

材料A (中种)
215g          高筋面粉 (High protein flour)
2g               酵母 (Instant yeast)
125g          全脂牛奶 (Full cream milk)

材料B(主面团)
125            高筋面粉 (High protein flour)
3g              酵母 (Instant Yeast)
1个             鸡蛋 (Egg)
40g            糖粉 (Icing sugar)
1/4茶匙     盐 (Salt)
12g            水 (Water)
50g            牛油 (Butter)

装饰
适量          美乃滋 (Mayonnaise)
适量           鸡丝 (Chicken floss)

步骤
1. 中种:把所有材料搓均匀,在室温发酵3小时。
2. 把所有主面团材(除了牛油)放入面包机发酵好的中种撕成小块一起加入。
3. Kenwood BM 250 面包机: 用8号面团功能,1小时半),把面团打均匀在面包机第一次搅
    拌停止后 (搅拌5分钟后会休息5分钟),加入牛油,让面包机继续搅拌(第二次搅拌20分
    钟),过后让面团在面包机里发酵1小时
4. 取出面团把面包分为每个大约60g,做造型,盖上湿布,等面团双倍发大后,放入预热烤
    箱170度烤12 - 15分钟。
5. 取出后,用刀在中间部分轻轻割一半(不要切断),挤入美乃滋,加入鸡丝,在面包表面
    也涂上少许美乃滋,撒上鸡丝,即可。

  4. jozelyn, 我也来宵夜啦。我也准备了面团在冰箱,面团要做包子。今天经过面包店,哥哥炒要吃面包,结果选了鸡丝包。
