大马国饭 ~ Nasi Lemak

相信所有马来西亚人对椰浆饭 (nasi lemak) 都不会感到陌生,因为可以随时随地吃到。无论你在餐厅,街边或是 Mamak 档,都可以大快朵颐。

大马国饭 ~ Nasi Lemak

记得上一次煮椰浆饭,是去年的事了。我还记得 May 称椰浆饭为大马国饭,所以这次当我煮椰浆饭时,就帮它取名为大马国饭。

这次的大马国饭,是比较“华人式”的,没有叁巴,但是也一样好吃饭香,咖喱美味,加上所有的配料,尤其是阿杂和乌龟豆,真的是太棒了。最难得的是有人加饭咯,所以我很开心。

咖喱鸡
3只         鸡腿 (3 chicken drumstick)
1汤匙     咖喱粉 (1 tsp curry powder)
3个         小马铃薯-切小块 ( 3 small potatoes - cut into cubes)
少许       盐 (Some salt)
1汤匙     油 (1 tbsp oil)
1支         咖哩叶 (1 stalk curry leaves)
4汤匙     WorldFoods 红咖喱酱 (4 tbsp WorldFoods Red Curry Paste)
4汤匙     水 (4 tbsp water)
100ml     椰浆 (100 ml coconut milk)


1.5杯      米 (1.5 cups rice)
2杯         水 -可以用1.5杯水+半杯椰浆+少许盐代替 (2 cups water - can be replace with 1.5 cups water + half cup coconut milk + pinch of salt)
1片         香兰叶-打结 (1 pcs pandan leaves - tie to knot)

水煮蛋

2个         鸡蛋-洗干净表面 (2 eggs - clean the surface and drain)

其他配料 (Other ingredients)
300g       花生 (300g peanuts)
50g          江鱼仔 (50g anchovies)
适量        乌龟豆-切小粒 (Some french bean - cut small)
1条         日本黄瓜-切片 (1 Japanese cucumber - sliced)
适量        阿杂(食谱按这里)(Some acar awak, recipe here).

1. 鸡腿洗净,沥干水分,沾上咖喱粉,腌至少半个小时。
    Wash and drain the chicken drumstick, coat with curry powder, marinate for at least half
    an hour.

2. 马铃薯切块后加少许盐腌。
    Coat potato cubes with some salt.

3. 把油倒入万能锅里,用“蒸煮”功能,油热后,把马铃薯倒入,盖上盖,过2分钟后打开,
    把马铃薯翻一翻,再盖上盖,过2分钟后打开盖,加入咖喱叶,把马铃薯和咖喱叶炒一
    炒。
    Put cooking oil into the smart cooker inner pot, use the "steam" function, heat the oil, 
    put the potatoes into the pot, close the lid and cook for 2 minutes, turn over the potatoes, 
    close the lid and continue to cook for another 2 minutes, add in curry leaves, stir fry 
    until fragrant.

4. 加入红咖喱酱,把材料拌均匀,盖上盖,3分钟后打开,加入腌好的鸡腿,搅拌均匀,
    加入水,盖上盖,用“蒸煮”功能,设定时间20分钟。
    Add in the red curry paste, mix well, close the lid and cook for 3 minutes, add in the 
    chicken drumstick, mix well, add in water, close the lid and use the "steam" function 
    to cook for 20 minutes.

5. 放上蒸架,蒸架上放一个大碗蒸饭和两个鸡蛋。
    Place a steamer rack into the smart cooker, put the rice bowl and eggs to cook
    together with the curry.  

6. 把蒸架取出,倒入椰浆,搅拌均匀,再“蒸煮”1分钟即可。
    Remove the steamer rack, pour in the coconut milk, mix well and reset the "steam" 
    function again to cook the chicken for 1 minute or until you see the gravy reboil.

7. 花生洗后用气炸锅,设定“炒香”功能,210度15分钟,取出后可以撒一点盐调味。
    Fry peanut with air fryer, set "stir fry" 210 degree for 15 minutes, can sprinkle some 
    salt to taste.

8. 江鱼仔洗后用气炸锅,设定“炒香”功能,210度15分钟。
    Fry anchovies with air fryer,set "stir fry" 210 degree for 15 minutes.

9. 把乌龟豆炒熟,加少许盐调味。
    Stir fry until cooked, add some salt to taste.


花生洗了后,直接“炒香”。

煮滚后,就立刻熄火


乌龟豆炒香,加少许盐调味

  1. 很喜欢nasi lemak,但是没自己煮过,因为过程很繁复,看了都觉得吃不消:P
    你的nasi lemak 很赞叻,还我想来一碟了。

    1. 其实如果没有煮 sambal,都不会太多工的,那个花生和ikan bilis弄好后,收在玻璃瓶里,可以耐很久一下的,只是煮curry麻烦一些,可是我都是把它们简单化,用调配好的酱料而已,省了很多时间。

    我也喜欢国饭, 但是dan胆固醇太高了, 总是克制自己少吃少吃, 哈哈!

    1. 是咯,我也是很久没爽爽的吃了,office开会如果是在早上,大致上都是吃 plain 的国饭,这个星期为了要消灭那个咖喱酱,江鱼仔,马铃薯,所以才煮了国饭。
