香芋蛋糕 Sweet Taro Cake

材料A (Ingredients A)
5个          蛋黄 (5 egg yolks)
25g         细砂糖 (25g caster sugar)
少许        盐 (Pinch of salt)
115g       牛奶 (115g milk)
80g         玉米油 (80g corn oil)
120g       特幼面粉 (120g superfine flour)
1/2茶匙   香芋香精 (1/2 tsp yam paste emulco)

材料B (Ingredients B)
5个           蛋白 (5 egg whites)
1/4茶匙    塔塔粉 (1/4 tsp cream of tartar)
35g          细砂糖 (35g caster sugar)

材料C (Ingredients C)
160g        蒸熟芋头 - 用食物处理器打烂 (160g yam - steam and blend with a food processor)
300g        打发植物性奶油 (300g beaten topping cream)
1茶匙       香芋香精 (1 tsp yam paste emulco)

步骤 (Steps)
1. 把材料A搅拌均匀,备用。
    Mix ingredients A until well, set a side.

2. 把材料B打至硬性发泡。
    Cream ingredients B until stiff peak form.

3. 把(2)分次拌入 (1),再倒入7寸圆型脱底模,然后轻轻敲出空气,放入预热烤箱170度烤40
    Mix (2) into (1) in few batches, pour into a 7 inches round loose pan, gently knock out 
    excessive air, bake in preheated oven at 170 degree Celsius for 40 minutes until cooked.   
4. 取出后,从离桌面大概20cm高度的地方,把蛋糕摔在桌上,把蛋糕倒扣,待冷才脱模。
    Remove from oven, lift the cake about 20 cm high from the table and give it a free fall 
    onto the table, overturn the cake and let it cool completely before remove from mould.
5. 蛋糕横切成3片。
    Cut the cake horizontally into 3 equal portion.

6. 取80g打发鲜奶油和芋头泥搅拌均匀,备用。
    Mix 80g of beaten topping cream with 160g of yam paste, mix well, set a side.

7. 把1片蛋糕放在蛋糕板上,铺上一半的(6),再铺1片蛋糕,再把剩下的(6)铺上,最后
    Put 1 piece of cake on the cake board, spread half of (6) onto the cake, cover with 1
    piece of cake, and spread the remaining (6) onto the cake, finally cover with another
    piece of cake.

8. 把香芋香精加入剩下的鲜奶油,搅拌均匀后,涂在整个蛋糕上,随意装饰。
    Mix the yam paste emulco to the remaining beaten fresh cream, cover the whole cake
    and decorate as desired.
