凯蒂五仁月饼 Hello Kitty Mixed Nuts Mooncake

这五仁月饼,是我最喜欢吃的月饼,从开始出来工作后,就爱上了它。可是每次看见食谱的时候,头脑都有很多问号,有很多我不认识的材料。

上个星期,到 Diana 家链接比萨食谱时,在 Sokehah Cheah 的家看到了食谱,好像突然间完全明白过来了,后来再看看其他博客朋友家的食谱,其实都是大同小异,怎么之前会觉得不认识那些材料呢?这是不是好像所 Aunty Young 说的“缘”到了。


当我要把月饼用压入模型,才发现到我的花好月圆模很小,所以最后他们变身成了凯蒂。看来,是时候要买个大一点的月饼模。


值得一提的是,这个月饼好香,果仁好脆,味道真的不错。可是,个人觉得它略甜了一些,下次再做,我要把糖冬瓜分量减半,再用瓜子取代剩下的分量,并把细砂糖改为糖粉,那么我的五仁月饼就真正的有了五仁,那就是杏仁,核桃,南瓜子,芝麻和瓜子。这个食谱对于我来说真的是一个好食谱,因为是这个食谱,令我“开窍”!哈哈!

以下食谱取自 Sokehah Cheah,略有少许更改

饼皮
材料A (Ingredients A): 
90g             自制糖青 (90g Homemade golden syrup)
38g             花生油 (38g Peanut oil)
2g                碱水 (2g Alkaline water)

材料B (Ingredients B): 

150g           香港面粉 (150g Hong Kong flour)

内陷 (Fillings)

材料C (Ingredients C)
30g                核桃-烘香切碎 (30 g walnut -toasted and chopped)
30g                杏仁-烘香切碎 (30 g almond - toasted and chopped)
19g                南瓜子 - 烘香 (19g pumpkin kernels, toasted)
38g                芝麻- 烘香  (38g sesame - toasted)
38g                桔饼-切碎  (38g kat paeng/candied lemon - chopped)
75g                糖冬瓜-切碎  (75g dried winter melon - chopped)
30g                 细砂糖 (30g caster sugar)
2+1/4 tbsp     花生油  (2+1/4tbsp peanut oil)
2+1/4 tbsp     水(2+1/4 tbsp water)
3/4tbsp          玫瑰露酒 (3/4tbsp rose wine)
3/8tbsp          自制糖青  (3/8tbsp homemade golden syrup)
1/8tsp             盐 (1/8tsp salt)
3片                 杆叶 (3 pcs Kaffir lime leaves, shredded)

材料D (Ingredients D)
60g                 自制糕粉 (60g Homemade koh fun)

蛋黄酱 (Egg wash)
材料E (Ingredients E)
1个                 蛋黄 (1 egg yolk)
2茶匙             水 (2 tsp water)

步骤 (Steps): 
1. 把材料A搅拌均匀,休息1-2小时。
    Mix ingredients A, let it reast for 1-2 hours.

2. 把材料B筛入(1),搓成面团,然后盖上保鲜纸,休面1-2小时。
    Sieve in ingredients B, mix to form a dough, cover with cling wrap, let it rest for 1-2 hours.

3. 揉成8个每个 33g 的圆球。
    Divide into 8 portion (33g each), shape into ball.


4. 把材料C混合均匀,休息1小时。
    Mix ingredients C, let it rest for 1 hour.

5. 加入材料D,揉成8个每个48g 的圆球。

    Add ingredients D, shape into 8 nos. of 48g ball.

6. 把(3)放在保鲜膜之间,用擀面棍擀平,包入(5),搓圆,放入撒上少许糕粉的模里,

    压出,放在烤盘里。
    Put (3) in between cling wrap, use the rolling pin to flatten the dough, wrap in (5), shape 
    into a ball, then place into a mould dusted with koh fun.

7. 放入气炸锅,160度烤15分钟(觉得用150度应该会更好)。

    Put into the air fryer, bake at 150 degree for 15 minutes (I think should instead use 
   150 degree for better results).

8. 材料E搅拌均匀,过筛,备用。

    Mix ingredients E until well combine, strain and set aside.

9. 取出(7),放凉15分钟,涂上两层(8),放回气炸锅,以150度烤10分钟。

    Remove (7) from air fryer, let it cool for 15 minutes, apply 2 layers of (8), return to the
    air fryer and bake at 150 degree for 10 minutes. 

10. 取出后,放在室温,月饼回油后,即可食用。
      Remove from air fryer, leave it cool at room temperature for 1-2 days, once the mooncake 
      skin soften, it is ready to serve.

笔记 (Notes)

125g 核桃 -放在盘里,气炸锅180度烘4-5分钟。
125g杏仁-放在盘里,气炸锅180度烘7-8分钟
100g南瓜子-放在盘里,盖上铝铂纸,气炸锅180度烘3-4分钟
100g白芝麻-放在碗里,盖上铝铂纸,气炸锅180度烘5分钟
自制糕粉 - 75g糯米粉-放在盘里,盖上铝铂纸,气炸锅180度烘5分钟

125g walnut - put into a plate, bake in air fryer at 180 degree for 4-5 minutes
125g almond - put into a plate, bake in air fryer at 180 degree for 7-8 minutes
125g pumpkin seed - put into a plate, cover with aluminium foil, bake in air fryer at 180 degree for 3-4 minutes
125g sesame - put into a bowl, cover with aluminium foil, bake in air fryer at 180 degree for 5 minutes
Homemade koh fun - 75g glutinous rice flour - put into a plate, cover with aluminium foil, bake in air fryer at 180 degree for 5 minutes

For those who prefer less sweet version, I recommend to reduce the sugar or dried winter melon.

准备杆饼皮


包入馅料


摸上少许糕粉


放入模里


压出


凯蒂印好咯


排在烤盘里


放入气炸锅,我放低层


160度烤15分钟
(建议用150度,可能要多烤1-2分钟)


取出,放凉15分钟


准备刷蛋黄液


刷上一次蛋黄液后


刷上两次蛋黄液后


150度再烤10分钟

经过第二次烘培出炉后

回油后,赶紧帮它们来个大合照

月饼的甜,都来自糖冬瓜,建议把糖冬瓜切碎一些

  4. Hi Jozelyn, my favourite mooncake filling but I don't make these every year. Too many choices these days from baked mooncakes to non-baked mooncakes and Jelly mooncakes, A long list to do...hahaha! Your children will be attracted to eat this.

  9. 好可爱的月饼。没吃过五仁月饼,很好奇它到底是什么味道。看着家家户户在做月饼,没做过月饼的我却怎么也提不起“木”。奇怪~
