吴宝春金牌土司 Wu Pao-Chun Champion Toast

我慢了大家好多拍,星期六晚上终于做了吴宝春金牌土司。相信这个家喻户晓的土司对大家并不陌生,大概每个博客都做过了。第一次见到他,在 Aunty Young 家。

这次算是我第二次用土司模做吐司,第一次做土司是去年的事,当时是做 kopitiam milk bun,没有盖上盖烤。第二次用土司模,这次盖上盖烤,表面烤得比较上色。

故事,其实是这样的,话说,星期六当我和大小老板到超市去买日用品时,竟然发现手推车里有一条面包,于是我问大老板,是谁要吃面包?他说他想吃,我说,我做土司,不必买。他好奇地说,你会做这样的面包咩?听他这么一说,我有点傻掉了。。。哦。。。对咯,除了买了面包机后曾经用面包机自动做土司之外,我真的很少做吐司。

于是回家后,我就开工了。这个吴宝春金牌土司早几个星期前就想试做,可是工作忙,而且近来时常带着小老板去医院做检查,人都已经很累了,除了睡觉,就只想睡觉。

材料A (Ingredients A)
300g      高筋面粉 (300g high protein flour)
24g         细砂糖 (24g caster sugar)
5g           盐 (5g salt)
3g           酵母 (3g instant yeast)
198g      牛奶 (198g milk)

材料B (Ingredients B)
15g        无盐牛油 (15g unsalted butter)

步骤 (Steps)
1. Kenwood 面包机: 把材料A放入面包机,启动功能8
    Kenwood bread maker: Put all ingredients A into the bread maker, turn on function no. 8.

2. 当面包机启动5分钟后,会休息5分钟,这时加入材料B
    The bread maker will rest after 5 minutes of mixing, then add in ingredients B after the
     first stop.

3. 当面包机再次启动后,会操作20分钟,过后让面团留在面包机里发酵1小时。
    When the bread maker start operate again, it will mix the ingredients for another 20 
    minutes, let the dough rest inside the bread maker for 1 hour.

4. 排气,把面团分成3份,杆平后,卷起,放入已经撒上高筋面粉的吐司模,盖上盖,让

    面团发酵到差不多碰到吐司模的盖。
    Punch down the dough to expel air, divide the dough into 3 portion, flatten the dough with
    a rolling pin, roll up, put into the bread tin, cover with lid, let the dough raise until almost 
    touching the lid. 

5. 
放入气炸锅,180度烤15分钟+10分钟。
    Put into the air fryer, bake at 180 degree for 15 minutes +10 minutes.

6. 面包出炉后,立刻脱模,待凉后才切。
    Remove from the tin immediately once bake, leave to cool then only slice the bread.

80度烤15分钟+10分钟


打开盖后


脱模后

第三天,剩下最后3片,我弄了Subway 给自己当早餐,面包还是软绵绵的,爱!

  4. 这个名字好熟悉。。不过我没做过。。呵呵。。因为我爹说过,要吃白面包,去外面几块钱就可以买一条回来了,不用做啦。。所以,没做过。。哈哈。。
