柠檬鸡 Chicken Braised with Lemon

这道柠檬鸡,也是妈妈看电视学后教我的。星期天中午,我用万能锅煮了这一道柠檬鸡,好下饭。


柠檬鸡

有点后悔我只煮了1/4只鸡,应该煮半只。

材料A (Ingredients A)
1/4            只鸡-斩件 (1/4 chicken - cut into pieces)
1茶匙       盐 (1tsp salt)
1茶匙       麻油 (1 tsp sesame oil)

材料B (Ingredients B)

半块         冰片糖 (Half piece brown sugar)
半个         柠檬-切成3片 (Half lemon - cut into 3 slices)
几片         嫩姜 (Few slice of young ginger)
5汤匙       水 (5 tbsp water)

材料C (Ingredients C)

1汤匙       绍兴酒 (1tbsp Shaoxing rice wine)

步骤 (Steps)

1. 把鸡块洗净,沥干水分,加入盐和麻油,腌至少30分钟。
     Wash and drain the chicken, add salt and sesame and marinate for at least 30 minutes.

2. 万能锅做法 Cook with smart cooker)

    (a) 用“蒸煮”功能,放入冰片糖,柠檬片和姜,盖上盖,煮2分钟。
          Use 'steam' function, put brown sugar, lemon and ginger slices into the smart cooker, 
          cover the lid and cook for 2 minutes.

    (b) 打开盖,加入水,再盖上盖,煮6分钟。

          Open the lid, add water and contnue to cook for another 6 minutes.

    (c) 打开盖,此时冰片糖已经融化,加入鸡块,随意翻炒一下,盖上盖,设定时间20分钟。

          Open the lid, at this time, the brown sugar should have melted, add in the chicken, stir
          fry for few seconds, cover the lid, set the timer to cook for 20 minutes.

    (d) 当时间倒数剩下最后5分钟时,打开盖,倒入绍兴酒,盖上盖。

          When the timer remains 5 minutes, open the lid, put Shaoxing rice wine, cover the lid.

    (e) 当时间倒数完毕,取出鸡块,此时酱汁应该已经开始收干了。

          Once the times up, open the lid, by this time, the chicken should have cooked and
          gravy is slightly dried up

3. 普通锅做法 (我妈的做法)Cook with wok (My mum's method)


    把鸡块,冰片糖,柠檬和嫩姜放入锅里(无需加水),小火慢慢炒至冰片糖溶化和鸡块
    熟透,离锅时沾入绍兴酒,即可。
    Put chicken, brown sugar, lemon and ginger slice into the wok (no need to add water), 
    stir fry the chicken with low flame until brown sugar melted. Once the chicken is cooked, 
    add in Shaoxing rice wine, turn off the flame and it is done.

打开盖后发现没有水,冰片糖很难融化,所以加水了
漏掉了拍一个步骤 ^_^

    1. heehee, I own the smart cooker quite sometimes ago before I had the air fryer. when cooking skill is limited then need some tools to help me!
