一二三四五排骨 One Two Three Four Five Pork Ribs

我妈看电视学了一道排骨,她教了几个朋友,她的朋友都说好好吃。我问我妈为什么没看见她煮过,她竟然说家里没有了绍兴酒和醋。上个周末我买了黑醋,煮了排骨,味道真的好好吃,所以一定要做个记录。

一二三四五排骨

这道排骨的调味料很好记,就是绍兴酒,黑醋,糖,酱油和水的比例是1:2:3:4:5。我是用铁汤匙来量所有的材料。

材料A (Ingredients A)
325g           排骨 (325g pork ribs)

材料B (Ingredients B)
1汤匙          绍兴酒 (1 tbsp Shaoxing rice wine)
2汤匙          黑醋 (1 tbsp dark vinegar)
3汤匙          糖 (3 tbsp sugar)
4汤匙          酱油 (4 tbsp soya sauce)
5汤匙          水-我用10汤匙 (5 tbsp water - I use 10 tbsp)
[ 备注:(a) 用普通锅煮,每5分钟打开盖一次,因为水分蒸发比较快,所以多用了水。(b) 用牛头牌万能锅煮,只打开一次翻排骨,就只需5汤匙水。]

步骤
1. 材料A的排骨放入一锅煮滚的水里烫一烫,捞起,沥干水分。
     Put ingredients A into a pot of boiling water and cook for a while, pick up the ribs and 
     drain the water.

2.  把(1)和所有材料B倒入锅里,大火煮滚后,转小火焖30分钟,每5分钟打开盖,
     翻一翻排骨,让排骨均匀上色,当排骨焖软后,水分收干,即可上碟。
     Put (1) and all ingredients B into the wok, bring gravy to boil, then turn to low flame,
     cover the wok with lid and braise for 20 to 30 minutes. Flip the ribs every 5 minutes so
     that the ribs cook evenly, once the ribs soften and the gravy dried up, turn off the flame 
     and the ribs are ready to serve.

材料A 

放入滚水里烫一烫

烫好的排骨和所有调味料

把所有材料放入锅

煮滚后,转小火,盖上盖焖,每5分钟打开盖翻一翻

煮了5分钟后

煮了10分钟后

煮了20分钟后

煮了25分钟后

煮了30分钟后

上碟后

我赶紧试了一块,好好吃呢。。。下次可以买多一些排骨再煮

牛头牌万能锅做法

把汁料和川烫过的排骨放入万能锅,盖上盖,蒸煮30分钟

时间倒数剩下15分钟,打开盖,反一反排骨以便均匀上色

煮好后

  4. Hi Jozelyn, I was telling my hubby to search the recipe for 1234 pork belly. He couldn't find the recipe in my blog. Then I told him to try 4321 and he found it. I think it's a similar recipe to this one but yours is without chopped garlic. Anyway, these pork ribs are yummylicious. Next time, I'll try with pork ribs.

    1. hahaha, I told my mum to quickly go buy the vineger but she said she can;t just buy 1 bottle when she only need 2 tbsp...hahaha!
