腰豆松脆饼

进来比较忙,不能像以前那样时常上来打理部落格。希望顺利完成手上的工作,那么我就可以花多一些时间下厨,然后可以上来放食谱,去家家户户拜访大家。

腰豆松脆饼

今天这个饼干,是为了配合这个月Aspiring Bakers 的主题而做的。这个食谱来自Alex Goh老师的《创意小饼干》。我做了以下食谱的一半,糖再减了20g,可是这个饼干对我来说,还是有点甜。虽然如此,饼干并没有留到第二天。这个饼干烤了10分钟左右,整个厨房就开始香喷喷了,小老板还跟我说,“good smell”,逗得我很开心!

材料A
150g          牛油 (Butter)
80g            赤砂糖 (Brown sugar)
130g          糖 (Sugar)
1/8茶匙     盐 (Salt)

材料B
1个             鸡蛋 (Egg)

材料C
140g          面粉 (Flour)
1/2茶匙     发粉 (Baking powder)
1/4茶匙     小苏打 (Baking soda)

材料D
30g            燕麦片- 搅打至幼 (Rolled oat, blend till fine) 我用Nestum代替
70g            腰豆- 切碎 (Chopped cashew nut) 我先烤香再切碎
50g            巧克力粒 (Chocolate chips)

50g            白巧克力- 切碎粒 (White chocolate, coarsely chopped) 我用白巧克力粒

步骤
1. 将(A)搅拌至松发,加入(B)搅拌至光滑。
2. 把(C)筛入(1),然后搅拌均匀,最后加入(D)混合均匀。
3. 捏出一小团(2),搓圆压扁,放在铺了烘培纸的烤盘上,每个饼干之间留一些空隙。
4. 送入预热烤箱,170度烤20分钟或至熟。
    [备注:这个饼干刚烤好时会呈软状,但是冷却后就会变得松脆。]
