虾酱炸鸡

咳嗽好长的一段时间,我最想念的就是鸡肉。。。

虾酱炸鸡


妈妈常说,咳嗽吃鸡,会变成百日咳,所以我都尽量戒口。可是,这样一咳,真的咳了很久。现在,勉勉强强算是好了,阔别了煎炸食物好一段日子,今天终于“开斋”了,选来了很想煮的一道大排档菜~虾酱炸鸡。

食谱参考《六十道轻松易煮大排档菜》里头的虾酱鸡翼。

这个炸鸡是比较咸香的,是大小老板爱的,我倒觉得味道太重,可能我吃清淡的食物太久了,味道太重的,还没接受到。不过,这个是值得推介的。用了气压锅,轻轻松松的炸好了虾酱炸鸡:)

《六十道轻松易煮大排档菜》
材料A
10只         鸡翅膀 (Chicken wings)

材料B
2大匙       虾酱 (Prawn paste)
1大匙       糖 (Sugar)
1大匙       芫荽碎 (Chopped coriander leaves)
1粒           鸡蛋 (Egg)

材料C
3大匙       粘米粉 (Rice flour)
1大匙       面粉 (Flour)
适量         油 (Oil)

步骤
1. 材料A洗净,沥干水分,加入材料B腌约30分钟,加入材料C,再腌30分钟。
Clean and pat dry chicken wings, add in ingredients B and marinate for 30 minutes, add in ingredients C and continue to marinate for another 30 minutes.
2. 烧热油锅,放进鸡翅膀炸至金黄,捞起,即可。
Heat up oil for deep frying, put in chicken wings and deep fry until golden brown, dish and drain.

我的材料和做法
材料A
1只           大鸡腿-斩件 (Big chicken drumstick)
3只           鸡翅膀-斩件 (Chicken wings)

材料B
1大匙       虾酱 (Prawn paste)
1/2大匙    糖 (Sugar)
1/2粒        鸡蛋 (Egg)

材料C
适量         面粉 (Flour)
适量         油 (Oil)

步骤
1. 材料A洗净,沥干水分,加入材料B腌至隔夜 (放在冰箱)。
2. 烧热加了油的气压锅,把鸡沾上面粉,油热后(用大火/摄氏220度),把鸡放入气压锅,盖上盖,直到气压锅发出连贯的巨响,继续煮2分钟,熄火,放气,直到银色的出气孔下降,打开锅盖,重新开火,把鸡略炸一下,逼出多余油分,捞起,即可。

鸡上些面粉

把鸡放入气压锅

盖上盖

放气

银色出气孔已经下降,表示可以打开锅盖

再次开大火逼出多余油分,就可捞起鸡肉

  3. Jozelyn, I cannot resist fried chicken wings! I previously bought the LKK shrimp paste out of curiosity but never use until it expire.

    I like the 气压锅 that you use.
    Will go check on the price… hehe…
    Normally how much oil you put to fry the chicken?
    How many time you re-use the oil?

    1. The oil i use is just enough to cover all the chicken that i want to fry, not much actually. I seldom reuse the oil, if i reuse, it will be another round only.
