我骗吃(一箭双雕),献上了炸云吞,我喜爱的点心之一。
炸云吞

材料A (Ingredients A)
185g 半肥瘦猪肉碎 (185g half-fat minced pork)
200g 鱼胶肉 - 已调味 (200g seasoned fish paste)
85g 虾仁 - 剁碎 (85g shrimp - mash)
10 粒 马蹄 - 切碎 (10 water chestnut - lightly chop)
1茶匙 盐 (1 tsp salt)
1茶匙 糖 (1 tsp sugar)
1茶匙 绍兴酒 (1 tsp shaoxing wine)
2汤匙 麻油 (2 tbsp sesame oil)
2汤匙 木薯粉 (2 tbsp tapioca starch)
少许 胡椒粉 (Dash of pepper)
材料B (Ingredients B)
1/4根 红萝卜 - 切碎 (1/4 carrot - grated)
2棵 芫荽 - 切碎 (2 nos coriander - chopped)
适量 云吞皮 (Some wanton skin)
材料C (Ingredients C)
适量 炸油 (Some oil - for deep frying)
步骤 (Steps)
1. 将所有材料A搅拌至起胶放进冰箱冷冻2小时,备用。
Mix all ingredients A until gluey and keep in the refrigerator for 2 hours before use.
3. 取云吞皮,包入(2),备用。
Wrap (2) with wanton skin, set aside.
4. 烧热一锅油,转小火,把云吞炸至金黄,滴干油分,即可。
Heat oil in a wok, turn to low flame, deep fried wanton until golden brown, drip dry and
serve.
