萝卜糕 Radish Cake

第一次尝试做了萝卜糕,好好吃哦!

糊里糊涂的我

首先,用了8寸模,我的小锅不能盖,后来改用了 loaf pan,才可以盖上盖。

第二,蒸糕时用了中火蒸,以为不熟,再蒸,蒸来蒸去,过了1个小时,才发现是用大火蒸,改了大火再蒸每15分钟查看,45分钟,测试的结果都和第一次一样,以为我的萝卜糕失败了,索性熄了火,不理了,想到失败了也没办法。

冷后切,竟然是熟的,而且好好吃,真的太美味了。

材料A (Ingredients A)
4朵          香菇 (4 nos mushroom)
1根          腊肠 (1 nos chinese sausage)
75g          虾米 (75g dried shrimps)
1汤匙       葱茸 (1tbsp mince shallots)
1汤匙       蒜蓉 (1tbsp mince garlic)
3汤匙       油 (3tbsp oil)

材料B (Ingredients B)
420g       白萝卜丝 (420g grated radish)
400ml      清水 (400ml water)

材料C (Ingredients C)
2茶匙      盐 (2tsp salt)
1汤匙      黄糖 (1tbsp brown sugar)
2茶匙      酱油 (2 tsp soya sauce)
1茶匙      胡椒粉 (1tsp pepper)
少许        麻油 (Some sesame oil)

材料D (Ingredients D)
400ml      清水 (400ml water)
250g        粘米粉 (250g rice flour)
30g          木薯粉 (30g tapioca flour)
30g          澄面粉 (30g wheat starch)

材料E
少许         青葱 (Some scallions)

步骤 (Steps)
1. 香菇浸软切成小丁,腊肠切小丁,虾米洗净随意切碎,把材料A的油烧热,爆香虾米,葱茸
    和蒜蓉后,加入香菇和腊肠炒香,盛起。
    Soak mushroom until soften and cut into small cubes, cut the Chinese sausage into small
    cubes, lightly chop the dried shrimps after wash, heat oil in the wok, stir fry dried shrimps,
    mince garlic and shallots till fragrant, then add in mushroom and Chinese sausage until 
    fragrant then transfer to a bowl.

2. 把材料B倒入锅里,煮至白萝卜变透明,加入材料C,搅拌均匀。
    Put ingredients into the wok, cook until radish become transparent, add ingredients C and
    mix well.

3. 转小火,倒入材料D和3/4的(1),慢慢翻炒至浓稠,熄火。
    Turn to low flame, add ingredients D and 3 quarter of (1), stir until all ingredients become 
    thickens, turn off the flame.

4. 把模涂上煮菜油,把(3)放入模里,表面可以用汤匙背沾上少许油抹平。
    Coat the mould with a layer of cooking oil, transfer (3) into the mould, dip some cooking 
    oil at the back of a spoon to flatten the surface of the radish cake.

5. 煮滚一锅水,大火把萝卜糕蒸45分钟或至熟。
    Bring a pot of water to boil, then steam the radish cake with high flames for 45 minutes or 
    until cooked.

6. 待萝卜糕完全冷却,把萝卜糕切块,配上(1)和少许青葱一起吃。
    Cool the radish cake before cutting, serve with (1) and scallions.
