'罗地加拉'配素咖喱羊肉 Roti jala serve with vegetarian curry mutton

10次开会,总有2-3次会吃到 roti jala。现在斋戒月,开会没茶点,竟然有点想念 roti jala。

Roti Jala + 素咖喱羊肉

那个 roti jala 模,很久以前逛街时,竟然被我发现到,才卖 RM1.30,所以赶快买了回家,可是从来就不曾动手做。。。就这样,那个模呆在橱柜里。。。前几天收拾厨房和橱柜,发现很多食材都过期了。。。唉。。。贪心的我。。。买买买。。。却没时间煮,结果,很多食材都坏了。。。赶紧送到 Mr Bin 嘴里。

还没过期的,就赶紧消灭他们,选来了 roti jala 配素咖喱羊肉。素羊肉是今年新年买的,放在结冰处半年了也。。。红萝卜和马铃薯是上个星期买的,赶紧把他们一起煮了。食谱参考《Y3K美厨食谱》第73期第62页,更改。Roti jala 食谱则取自 Sonia ,自己多加了黄姜粉和水。

Roti Jala 材料
200g         面粉 (200g plain flour)
100g         牛奶(100g  milk) 
270g         水 (270g water) 
1个            鸡蛋 (1 egg)
1/4茶匙     盐 (1/4 tsp salt) 
1汤匙        黄姜粉  (1 tbsp turmeric powder)
1汤匙         油 (1 tbsp cooking oil)

步骤 (Steps)
1. 把所有材料混合均匀,过筛。
     Mix all ingredients until well combine, sieve the batter.


2. 烧热不粘锅,把(1)放入 roti jala 模,在不粘锅上打转,让面糊流入锅里,煎至熟,
    卷起,即可。
    Heat up the non-stick pan, place (1) into the roti jala mould, move the mould in circular 
    motion over the non-stick pan to form a net, fry until cooked, roll up, that's all.

熟透后,就卷起 

刚开始煎时,面糊流不出来,所以我多加了50ml水

素咖喱羊肉材料
150g          素羊肉-切丁 (150g vegetarian mutton)
3个             马铃薯-切丁 (3 potatoes - diced)
3条             红萝卜-切丁 (3 carrots - diced)
450ml         水 (450 ml water)
适量            油 (Some oil)
2粒             八角 (2 star anise)
5粒             丁香 (5 cloves)
2寸             桂皮 (1 inches cinnamon stick)
1支             咖哩叶 (1 stalk curry leaves)
1包            自制咖喱料 (1 pack home made curry paste)
200ml        水 (200ml water)
3汤匙         番茄酱 (3 tbsp tomato sauce)
1茶匙         盐 (1 tsp salt)
1汤匙         糖 (1 tbsp sugar)
200ml        椰浆 (200ml coconut milk)

步骤 (Steps)
3. 把450ml水煮滚,把马铃薯丁和红萝卜丁大火烫5分钟,捞起,水保留。
     Heat 450ml water in a wok, put diced potatoes and carrot, boil for 5 minutes using 
     high flame, pick up the potatoes and carrot, retained the water.

4. 把油烧热,爆香八角,丁香和桂皮爆香。
    Heat oil in a wok, stir fry star anise, clove and cinnamon stick until fragrant.

5. 倒入咖喱料炒香,加入咖喱叶继续爆香后把马铃薯丁和红萝卜丁回锅炒香。
    Put the curry paste into the wok and fry till fragrant, add curry leaves, fry until fragrant, 
    put the potatoes and carrot and  stir fry for a while.

6. 加入所有的水,煮滚后,加入素羊肉丁,焖几分钟。
    Add water, bring to boil, put vegetarian mutton into the wok, cook for few minutes.


7. 加入番茄酱,盐和糖,试味,待马铃薯丁和红萝卜丁煮软后,加入椰浆,待咖喱
    再次滚开后,熄火,即可。
    Add tomato paste, salt ad sugar to taste, cook the potatoes and carrot until soft, 
    pour the coconut milk into the wok, bring to boil, turn of the heat, dish out.

马铃薯丁和红萝卜丁

先把马铃薯和红萝卜稍微烫软

爆香八角,丁香和桂皮
  
爆香咖喱酱

加入咖喱叶

马铃薯和红萝卜回锅

加入水

加入素羊肉

加入所有调味料

盛起,放入小锅里

还可以骗到人吗?

    咖喱素羊肉,我很喜欢。家里偶尔也会煮。还在想要用它支持“马铃薯”月呢!

    1. Roti jala is totally different from prata, it is soft, prata is kind of "crunchy"
