一直以来,我的戚风蛋糕口感已经做到OK了,可是还是有很多洞洞,这一点还要继续努力。这次做香兰戚风蛋糕,用的是以前的食谱,做法却参考了甜悦。可是还是需要多练习,才可以把戚风烤到美美而又没有大洞洞。
这次我做了4个蛋的戚风,蛋糕就不会高过我那个7寸半的脱底模,平常做5个蛋的,蛋糕长了个“冬菇头”,哈哈哈。除此之外,我用了家里剩余的香港面粉,蛋糕做出来,竟然和相思蛋糕的口感一样,实在是太柔软和湿润了。
因为小老板吵着要吹蛋糕,所以我打了150g鲜奶油,并且用了2个奇异果装饰,水果也是就地取材,冰箱有什么就放什么。
同时,蛋糕涂上奶油即吃,那个小捣蛋在我开始装饰蛋糕时一直拿着生日快乐的牌子和蜡烛缠着我,没来得及把照片拍好。

材料A (Ingredients A)
4个 蛋黄 (5 egg yolks)
18g 细砂糖 (18g caster sugar)
少许 盐 (Pinch of salt)
92g 香兰汁 (92g pandan juice)
64g 玉米油 (64g corn oil)
96g 特幼面粉-我用82g香港面粉+14g特幼面粉 (96g superfine flour - I substitute with 82g Hong Kong flour + 14g superfine flour))

Interesting that you are baking this chiffon cake without using the chiffon cake pan and yet it is still so perfectly risen!
