趁着小拇指月,煮了椰糖伽耶。
要看之前的香兰伽耶食谱可以按这里和这里。之前的香兰伽耶食谱,对于我来说,是略甜了一些。但是,我很喜欢这个椰糖伽耶,因为它不甜不腻,而且很香。。。
这次我没有把椰糖伽耶煮得太浓稠,觉得这样比较容易涂面包。还有,这个椰糖伽耶真的很香,配上紫薯面包,超赞。
小小风波:我第一次做椰糖伽耶时,是跟着食谱,只是我用面包机,可是我忘了要去注意它,结果椰糖伽耶变成了椰糖布丁@_@ 椰浆我是用150g椰丝加入170g热水,挤出200g新鲜椰浆,而且也刚好有粒132g的椰糖,可是哦。。。天意弄人。
后来重做,椰丝还剩130g,却挤了260g的椰浆,哎呀呀。。。最后决定用回 double boil method,谨守岗位,确保我的椰糖伽耶万无一失。

130g 马六甲椰糖 - 切碎,我用1个马六甲纯椰糖171 g (130g palm sugar/ gula Melaka -
finely chopped, I use 1 nos 171 g)
200g 椰浆 - 我用新鲜椰浆 260g (200g coconut milk - I use fresh coconut milk 260g)3个 鸡蛋 - 打散 (3 eggs - lightly beaten)
少许 盐 (Pinch of salt)
3片 香兰叶 (3 pcs pandan leaves)
步骤 (Steps)
把所有材料 (除了椰糖)混合,过筛数次,加入椰糖,隔水小火煮至浓稠(我用了45分钟),边煮边用打蛋器轻轻搅拌,即可。
Mix all ingredients (except gula Melaka), sieve several times, add in gula Melaka, cook with low flame using double boil method (I cook for 45 minutes), lightly whisk while cooking.
