紫薯香兰冰皮月饼 Purple Sweet Potatoes Pandan Snow Skin Mooncake

这款冰皮月饼,是属于健康的月饼。

紫薯香兰冰皮月饼


冰皮我还是用了之前的食谱,略做少许更改,就成了香兰口味的。蒸好的冰皮,共做了16个每个25g饼皮的冰皮月饼。

馅料 (Fillings)
480g    紫薯 - 切块后的重量 (480g purple sweet potatoes - weigh after cut)
80g      细砂糖 - 自选 (80g caster sugar - optional)

步骤
把紫薯削皮切块,大火蒸熟,趁热压烂,根据紫薯的甜度,趁热加入细砂糖搅拌均匀,用
保鲜膜盖好,待凉备用。
Peel and cut purple sweet potatoes, steam with high flame, mash with a folk while still hot, then add in caster sugar according to the sweetness of the sweet potatoes, cover with cling wrap, set aside to cool down.




冰皮 (Snow skin)
材料A (Ingredients A
5片       香兰叶 (5 pcs pandan leaves)
230g    牛奶 (230g milk)


材料B (Ingredients B)
50g      糯米粉 (50g glutinous rice flour)
50g      粘米粉 (50g rice flour)
50g      糖粉 (50g icing sugar)
30g      澄面粉 (30g wheat starch)

材料C (Ingredients C)
30g      炼奶 (30g sweetened creamer)
30g      玉米油 (30g corn oil)

步骤 (Steps)
1. 把材料A用混合器打至细幼,过筛备用。
    Blend ingredients A in a blender, sift the ingredients and set aside.

2. 把材料B倒入一个大盆,用打蛋器搅拌均匀,加入 ( 1 ) ,把粉类搅拌至完全和 ( 1 ) 混
    合,接着加入材料C炼奶搅拌均匀,最后加入油,搅拌至油被充分吸收。
    Put ingredients B into a big bowl, mix with a hand whisk, add in (1), stir till well combine, 
    add in sweetened creamer in ingredients C, continue to whisk until well combine, finally
    add corn oil, stir until corn oil well combine in the mixture.

3. 烧热一锅水,把(1)倒入一个深碟内,大火蒸25分钟至熟,蒸的期间,锅盖的一边夹住

    一块布,防止水蒸气跌入碟內。
    Bring to boil some water in a wok, pour (1) into a deep plate, steam with high flame for 
    25 minutes, put a piece of cloth in between the wok and the lid at one side of the wok to
    let water evaporate, this is to prevent the water from condensation and fall into the 
    mixture.

4. 把蒸好的面团取出,用筷子撮入面团,打格子,过后用塑胶抹刀把所有粉团拌匀,防止粘

    在碟里,放在一旁待凉。
    Remove the steamed dough from the wok, use a chopstick to divide the dough into small
    grid, then use a spatula to mix the dough until glossy to prevent the dough from sticking 
    to the plate, set aside to cool.







组合
400g       冰皮 - 分成25g (400g snow skin - divide into 25g each)
400g       紫薯馅 - 分成25g (400g purple sweet potatoes fillings - divide into 25g each)
少许        自制糕粉 (Some homemade koh fun)

步骤 (Steps)
5. 
用冰皮
紫薯馅,搓圆,表面沾少许糕粉。
    Wrap purple sweet potatoes into snow skin, roll into ball shape, dust the surface with 
    some koh fun.

6. 模涂上少许糕粉,多余的粉倒出,把(5)放入模里,轻轻压出,然后把饼皮月饼放在托

    纸上,收在密封的盒子里,放入冰箱2小时,待冰冷后吃味道会更好。
    Lightly dust the mould with some koh fun,  put (5) into the mould, then lightly press, put 
    the snow skin mooncake in paper casing, store in air tight container in a fridge for about 
    2 hours before consuming.
