榴莲北海道杯子蛋糕 Durian Hokkaido Cup Cake

12月3日是 "普天同上" 北海道蛋糕的日子,刚好结冰处有榴莲,我就做了榴莲北海道杯子蛋糕。

榴莲北海道杯子蛋糕


用了上次的北海道牛奶蛋糕食谱,但是做法略微改变,喜欢 Mui Mui 家漂亮的北海道,只是我用了气炸锅,蛋糕表面不平坦,但是很肯定的是若改用烤箱烘,蛋糕出炉一定美美的。

若你也喜欢没有“爆脸”的北海道蛋糕,那么请你也务必把蛋糕里的液体先加热,降温后才用!轻轻把烘好的蛋糕摔在桌面,也可以防止蛋糕回缩,真的也!

榴莲戚风蛋糕 (Chiffon cake)
材料A (Ingredients A)

40g          榴莲 (40g durian flesh)
40g          牛奶 (40g milk)



步骤
1. 材料A用掺合机打均匀,过滤,共55g,分成25g和30g备用。
    Mix ingredients A in a blender, sieve, I obtained 55g, divide into 25g and 30g, set aside.

材料B (Ingredients B)
25g         材料A (25g ingredients A)
40g         玉米油 (40g corn oil)
20g         牛奶 (20g milk)

材料C (Ingredients C)
3个          蛋黄 (3 egg yolk)
10g          细砂糖 (10g caster sugar)
60g          香港面粉 - 过筛 (60g Hong Kong flour - shifted)



材料A (Ingredients D)
3个          蛋白 (3 egg whites)
35g          细砂糖 (35g caster sugar)

步骤
2. 把材料B隔水加热,放凉至微温后,加入材料C,搅拌均匀
    Heat ingredients B using a double boil method, leave to cool until luke warm, add in 
    ingredients C and mix well.

3. 在另一个盆里,把材料D打至硬性发泡。
    In another bowl, whip ingredients D until stiff peak form.

4. 分3次,把(3)拌入(2)里,用刮刀搅拌均匀。
    Use a spatula to fold (3) into (2) in 3 batches.

5. 把(4)放入纸杯,然后放入气炸锅,130度30分钟,最后3分钟转150度把蛋糕烘至熟,
    取出后,,在离桌面大概15cm的高度摔在桌上,待凉。
    Put (4) into paper liners, bake in the air fryer, 130 degree for 30 minutes, turn to 150 
    degree when baking time remains 3 minutes, remove from air fryer, lightly drop the cake
    onto the table from a height about 15 cm from the table, leave the cake to cool.

材料E (Ingredients E)
120g           植物性奶油 (120g topping cream)
30g             材料A (30g ingredients A)

装饰 (Decoration)
适量            草莓 (Some strawberries)

步骤 (Steps)
6. 把材料E打发,放入挤花袋,待蛋糕冷却后,挤入蛋糕里,用草莓装饰,即可。

    1. 你的oven温度可能比较热,调低一点拉长时间来bake,一定可以不破脸的。
