有一天开会时顺便替其中一名同事庆生,有位同事带来了好吃的萝卜核桃蛋糕加奶油芝士糖霜 。哇,好久没吃到这款蛋糕了。
萝卜核桃蛋糕加奶油芝士糖霜
记得第一次吃这个蛋糕的时候,就爱上了,每次大老板去Lorong Haji Taib见客,一定会从一家名叫“时代饼家 Suanson“的蛋糕店买他们出名的 carrot walnut cake或者 prune walnut cake。刚好家里有核桃和奶油芝士,google了食谱,发现到好像不太难做,所以我一早起身就快快弄了,准备+烘培+装饰两小时内搞定。
材料A (Ingredients A)
80g 核桃-烘香,切碎 (80g walnut - toasted, simply chop)
150g 红萝卜-刨丝 (150g carrots - finely shredded)
贴士: 烘香核桃气炸锅做法,放在盘里,盖上铝铂纸,180度3分钟。
Tips: Baking walnut with air fryer, put into the plate, cover with aluminium foil, 180 degree 3 minutes.
材料B (Ingredients B)
130g 面粉 (130g plain flour)
1/2tsp 泡打粉 (1/2tsp baking powder)
1/2tsp 小苏打(1/2 tspbaking soda)
1/4 tsp 肉豆蔻粉 - 自选 (1/4 tsp nutmeg powder - optional)
1/4 tsp 肉桂粉 - 自选 (1/4 tsp cinnamon powder - optional)
材料C (Ingredients C)
1/2tsp 盐 (1/2 tsp salt)
70g 细砂糖 - 可减至55g (70g caster sugar - can be reduce to 55g)
70g 赤砂糖 - 可减至55g (70g brown sugar - can be reduce to 55g)
材料D (Ingredients D)
100g 玉米油 (100g corn oil)
2个鸡蛋-打散 (2 eggs, lightly beaten)
步骤 (Steps)
1. 所有材料B过筛,用手拌器搅均匀。
Sieve all ingredients B into a mixing bowl, use a hand whisk to whisk the flour.
2. 加入材料C,搅拌均匀。
Add ingredients C, lightly whisk to combine all ingredients.
3. 加入材料D,搅拌均匀至糖溶化,加入材料A的红萝卜丝,搅拌均匀,最后加入核桃,
搅拌均匀,倒入7寸铺了纸的圆模,放进气炸锅150度烘10分钟,打开盖,盖上铝铂纸,
继续烘40分钟至熟,脱模待凉(不脱膜,蛋糕也不会回缩)。
Add in ingredients D, stir until all sugar dissolve, add in shredded carrot, mix till even,
finally add in walnut, pour into a 7 in round mould lined with baking paper, bake in air
fryer at 150 degree Celcius for 10 minutes, then cover with aluminium foil, continue to
bake for another 40 minutes, remove from mould (if let the cake cool in the mould
also OK) , leave to cool completely.
奶油芝士糖霜 (Cream Cheese Frosting)
材料E (Ingredients E)
200g 奶油芝士 (200g cream cheese)
100g 牛油 (100g butter)
100g 糖粉-我家刚好没了,用了60g细砂糖代替 (100g icing sugar, I replace with 60g caster sugar)
1个 柠檬的皮 (1 nos lemon zest)
1tsp 柠檬汁 (1tsp lemon juice)
贴士: 若用糖粉,可减至80g。
Tips: If using icing sugar for the cream cheese frosting, icing sugar can be reduce to 80g.
步骤
4. 把放在室温的奶油芝士和牛油略微搅拌,加入糖,打发,最后搬入柠檬皮和柠檬汁,
装入挤花袋,挤在蛋糕上,食用前先冷藏一下。
Beat the cream cheese and butter (in room temperature) until combine, add in sugar,
beat until light and creamy, add in lemon zest and lemon juice, mix till combine, put into
a piping bag, pipe onto the carrot walnut cake, chill before serve.
核桃-烘香,切碎
红萝卜-刨丝
材料B过筛,用手拌器搅均匀
加入糖
搅拌均匀
加入材料D和红萝卜丝
加入核桃
放入模里
用气炸锅150度40分钟
烤好后
室温的奶油芝士和牛油
稍微打发
加入细砂糖继续打发
最后加入柠檬汁和柠檬皮
把蛋糕切平,涂上一些奶油芝士
挤出自己喜欢的造型,随意铺上彩糖,即可
这是一个很好吃的蛋糕,推荐!

ReplyDeleteHi, thanks for dropping by and let me know about this. I guess the baking pan size and thickness may be one of the factor contribute to this. I have few experience baking pizza with different plate/ pan with air fryer but different plate/ pan may end up with different results, some required longer baking time. For your infomation, I am using 2 LTK omega eggs for the cake. Normally, I will test the cake with a satay stick to check whether it is cooked before I take out. Hope this could help you.
DeleteHi, Wendy, I bake another 3 times of this cake, I have alter the baking steps, hope this could help you. I bake at 150 degree C for 10 min, then I cover with aluminium foil, and continue to bake for another 40 minutes. Cover with aluminium foil is important if you bake with air fryer or else the top of the cake end up crispy.
