盆菜 Poon Choi

去年除夕为家人准备过一次盆菜后,今年再来挑战。可能已经做过一次了,这次觉得做起来比较得心应手。


盆菜

可是在“开餐”之后,底部的大白菜有点焦了,因为我铺好盆菜后忘了开电“keep warm”,等到大家捞生后要开餐时,盆菜凉了,于是我开了“大火”,所以导致底部的大白菜有点焦了,盆菜有了“缺陷”。

无论如何,幸好大家都不嫌弃,还是吃到完。由于食谱去年已经分享过,所以就不再分享了,懒惰重写 ^_^,食谱可以按这里。For recipe, please click here.

这里只分享制作过程。

步骤1:炸芋头
Step 1: Deep fry yam stick
芋头切条状 (1cm x 1cm x 6 cm)
Yam (Taro) cut into strips (1cm x 1cm x 6 cm)

炸熟
Deep fried the yam stick

捞起后沥干油分
Drain excessive oil

步骤2:焖白萝卜
Step 2: Stew Radish
洗干净白萝卜
Clean the raddish

切成 1cm 厚度
Cut into 1 cm thickness

炸至透明
Deep fried until the radish looks transparent

捞起后沥干油分
Drain excessive oil

准备3瓣酸头,3片姜,3粒冰糖,1颗八角和1束香菜(茎部要保留)
Prepare 3 cloves garlic, 3 slice ginger, 3 nos rock sugar, 1 nos star anise and 1 bunch of coriander (retain the stem)

爆香姜片和蒜头
Stir fry ginger slice and garlic until fragrant

放入白萝卜
Put radish into the pot

加水
Add water

加入其他材料和调味料
Add in other ingredients and seasoning

煮滚后把萝卜焖至软
Bring to boil and stew till radish soften

步骤3:焖冬菇,好事发财和鱼漂
加入调味料煮滚
Add in seasoning and bring to boil


加入鱼漂
Add in fish maw
  
加入玉米淀粉勾芡
Add in corn starch to thicken the gravy

煮好了

步骤4:烧肉
Step 4: Roast Pork

步骤5:焖豆腐卜
Step 5: Braised Stuff Tofu
酿豆腐卜和肉丸
Stuff the tofu

先煎有肉的那一面
Stir fry the side with meat first

再反过来煎
Then turn over to stir fry the other side

沥干油分
Discard excess oil

多出的做成肉丸
The remaining fillings make it into meat ball and fry till golden brown

倒入水
Pour water into a wok

加调味料
Add in seasoning and bring to boil

加入玉米淀粉勾芡
Add in corn starch to thicken the gravy

煮好后
It is done

上碟
Put into a plate first

步骤6:清蒸白斩鸡 (可以参考这里这里
Step 6: Steam Chicken (Refer here or here)

步骤7:烫青菜
Step 7: Boiled vegetables

步骤8:罐头鲍鱼和珍珠鲍
Step 8: Canned Abalone and Pearl Abalone


把标签取出后,放入锅里,水要盖过罐头,开火煮滚后,转小火煮15-30分钟左右,熄火
Remove the label, put into a pot, immerse the canned abalone and pearl abalone in the water, bring to boil, turn to low flame and continue to cook for 15-30 minutes.

步骤9:蒜茸蒸大虾
Step 9: Steam prawn with mince garlic
把虾清理干净
Clean and pat dry the prawn

虾用少许糖腌,蒸之前放上蒜米,淋上绍兴酒
Marinate the prawn with some sugar, before steam, place the mince garlic and some Shaoxing rice wine

蒸好了
It is done

步骤10:组合盆菜
Step 10: Assembly the poon choi
准备一个锅
Prepare a pot (I use wok)

先铺大白菜
Place the Chinese cabbage 

然后铺上芋头
Then place the yam stick

接下来是焖好的白萝卜
再铺上鱼漂(我忘了拍照)
and follow by radish, after that should be fish maw (but I forget to take photo ^_^)

再铺上所有准备好的材料
And arrange all remaining dish

用香菜装饰
Garnish with coriander
