父亲节快乐,今早做了大老板最爱的英式柠檬蛋糕。
水蜜桃英式柠檬蛋糕
海绵蛋糕食谱参考Alex Goh《行行出状元做蛋糕也赚钱》。
材料A
4个 蛋白 (4 egg Whites)
100g 细砂糖 (100g Caster sugar)
材料B
4个 蛋黄 (4 Egg yolk)
材料C
100g 普通面粉-过筛 (100g Plain flour - shifted)
材料D
30g 融化牛油 (30g Melted butter)
步骤
1. 用高速把材料A的蛋白打至发泡,加入糖改用中速打至坚硬。
Whip egg whites with high speed until foamy, add in sugar and continue to whip in
medium speed until stiff.
2. 加入B打至浓稠。
Add in B and whip until thick.
3. 加入C,用刮刀拌匀。
Add in C, mix with a spatula until combined.
4. 加入D混合均匀。
Stir in D and mix well.
5. 倒入8寸铺了纸的模,送入预热烤箱180度烤30分钟至熟,出炉后,马上脱模,待冷后,
横切成2片。
Pour into a 8-in mould lined with paper, bake in preheated oven at 180 degree Celsius
for 30 minutes or until cooked, remove from mould immediately, leave to cool and cut
into 2 slice horizontally.
[ 备注:我用气炸锅,150度25分钟 + 5分钟。]
柠檬酱 (改自这里)
材料E
70g 柠檬汁 (70g Lemon juice)
65g 细砂糖 (65g Caster sugar)
2个 柠檬的皮 (2 nos Lemon zest)
2个 鸡蛋 (2 Eggs)
材料F
45g 牛油 (45g Butter)
步骤 (Steps)
6. 把E放在一个干净的碗里,隔水煮至糖溶化,期间不断搅拌,看见有小泡泡后,就可以
离火,过滤到另一个干净的碗,加入F,隔水煮至F融化,期间不断搅拌,柠檬酱开始
浓稠,就可以离火 (柠檬酱离火后还会更加浓稠)。

stir consistently until small bubbles form, remove from heat, strain into another clean

starts to thickens, remove from heat. (The lemon sauce will continue to thicken after

1罐 水蜜桃 (1 can Peach)
300g 打发鲜奶油 (300g whipped topping cream)
300g 打发鲜奶油 (300g whipped topping cream)
组合蛋糕
7. 把一片蛋糕放在9寸蛋糕板,涂上一层柠檬酱,铺上鲜奶油,排入水蜜桃,再涂上鲜
奶油,铺上另一片蛋糕,涂上柠檬酱,再把整个蛋糕涂上用鲜奶油,把剩下的柠檬酱
倒在蛋糕表面,铺上水蜜桃,即可。
Place a piece of cake on a 9-in cake board, coated with lemon sauce, covered with
whipped cream, put peach on top, then coat with whipped cream again, lay another
piece of cake on top of the whip cream, coat with lemon sauce, then coat the entire
cake with whipped cream, pour the rest of the lemon sauce on the surface of the cake,
arrange the remaining peach on top, that's all.

湿性发泡
干性发泡
加入蛋黄
分3次加入面粉
加入融化牛油
放入8寸模
150度烤25分钟+5分钟
脱模
其实我分了3片,有一片没有用到,因为被我切坏了
柠檬酱材料

起泡后
过筛
加入牛油继续煮至浓稠
准备离火

冷藏后
切开后
还需努力
