马铃薯焖肉 Stew Potatoes with Meat

这是我妈时常煮的一道菜,每个星期一定会有一道马铃薯焖猪肉,不然就是马铃薯焖鸡。我自己煮了几次,还在摸索着,还是没有煮到妈妈的味道。

马铃薯焖肉

材料A
125g         廋肉 - 切成长条 (125g lean pork - cut into strips)
1茶匙        麻油 (1 tsp sesame oil)
1/2茶匙     盐 (1/2 tsp oil)

材料B
3个            马铃薯-去皮切薄片 (3 nos potatoes - remove skin, cut into thin slice)
1/2茶匙     盐 (1/2 tsp salt)
适量          油 (Some oil)

材料C
少许          油 (Some oil)
1茶匙        蒜蓉 (1 tsp minced garlic)
1汤匙        黑酱油 (1 tbsp dark soya sauce)
1茶匙        酱油 (1tsp soya sauce)
250ml        水  (250 ml water)

步骤
1. 把材料A搅拌均匀,盖上保鲜膜,放入冰箱腌至少半小时。
    Mix A in a bowl, cover with cling wrap, let it marinate it the fridge for at least half an hour.

2. 把马铃薯加入少许盐,烧热油后,把马铃薯放入锅里炸/ 煎至少许金黄,捞起,备用。
    Add salts to potatoes, heat the wok with some oil, fry/ stir fry the potatoes until slightly 
    golden brown, set aside.

3. 烧热材料C里的油,加入已经腌好的(1),炒至半熟时,加入蒜蓉炒香,把(2)
    回锅,把所有材料炒均匀,加入水,黑酱油和酱油,煮滚后,转中小火,盖上盖,
    把马铃薯焖至软,汁收干一点,即可上碟。
    Heat oil in a wok, stir fry the meat strips, add in garlic and stir fry until fragrant, return 
    the potatoes into the wok, mix well, add in water, dark soya sauce and soya sauce,
    bring to boil, turn to medium low heat, cover with lid, cook potatoes until soft and gravy
    slightly dry up, then it is ready to serve.

加入水

加入黑酱油和酱油

煮滚

盖上盖之后,转中小火焖

焖好后

上碟

  12. Jozelyn, so ngam ...I often cook this 家常菜 too and use either chicken or pork. Any dish with potatoes and black sauce my big kids will finish big plate of rice !
